With next to no competition during this holiday season, Cho-sen Island stands as one of the few restaurants cooking kosher for Passover in Five Towns.

Mangaer Norman Wong has ordered all new dishes, silverware, steam table and even a new deep fryer for the holiday to cook up many of his popular dishes — such as General Tzo’s chicken, half roast duck and beef with broccoli — all kosher for Passover.

“We are cooking mostly Chinese dishes except we don’t use soy sauce,” Wong explained. “There are a lot of people still in town and so many Jewish people who observe have no places to eat.”

In addition to purchasing new dishes and silverware, Wong closes his doors two days prior for cleaning and kashering.

“Passover always costs us more money,” he said, “and I think the prices for the regular meal over here are about 15 to 20 percent more than regular times.”

Manager Howie Klagsbrun is staying open every night until midnight leading up to the holiday so everyone can stock up on just about anything imaginable.

“We have everything from barbecue sauces, balsamic vinegars, a variety of oils — traditional matzo are a-plenty and a plethora of items in the confectionary department,” Klagsbrun said. “This is a gluten free party, so anyone who’s got gluten issues — this is your holiday.”

Klagsbrun started ordering months in advance to make sure Gourmet Glatt has everything anyone could need.

“You need to know what brands are available, and I want to make sure I’m getting quality products at the right price,” Klagsbrun said. “We have gone so far beyond the traditional.”

David Hertz, owner of the shop, plans to stay open late before Passover for last minute purchases.

“We have last minute Seder plates and Seder toys. We have a huge assortment of arts and crafts for kids,” Hertz said. “Toys keep kids interested throughout the Seder.”

Hertz added that the shop is selling a lot of the New American Hagaddah and should have plenty in stock.
