Summer's Over Babe (& A Chocolate Chip Cookie Recipe)

Random thoughts on lunch, kids, dorm room smell and a recipe.

Summer's over.

The kids are home from camp, back at school. For me, that means my daughter (E) just started high school, my son (B) started middle school.

The best thing about high school is no more preparing lunch. I am so happy E will be going out for lunch everyday — all I have to do is make sure I let her know in advance where I will be going that day, so I can save her the embarrassment of having lunch in the same establishment as me and my friends.

On the other hand, I still have to make lunch for B. This is not fun, because there's always a problem — I believe this week the sandwich was thrown away because B found hair on it — GROSS, I agree, but I think untrue since my husband made the sandwich and that was not the hair that was supposedly found. B, I think, will now get takeout for lunch.

Since the kids are back at school, and the beach club is closed, I'll be working a lot more. In the mornings. Before lunch. Maybe after lunch, before school pick up.

Since this is my first blog entry, I asked my Facebook friends what they would be interested in reading about from me — answers were recipes, home decor, handling family and being a working mom, and book reviews. That's a lot to cover in one blog post, but I'll do the best I can!

Since many of your children are now in college or getting apartments, the best home decor item I reccomend is a DIFFUSER!!! If you don't know what this is, it's a bottle filled with scented liquid that magically disperses into the air through a bunch of sticks (reeds). Anyone in that room will thank me. Do you remember that dorm room smell???

I will also leave you with my favorite chocolate chip cookie recipe, great for your kids at home, away at school, living in the city, or just for you to eat and enjoy when everybody is out of the house during the day.

1 stick butter, 1/2c brown sugar, 1/2c white sugar, 1 egg, 1tsp vanilla, 1c flour, 1/2tsp baking soda, 1/2tsp salt, 1/2c quick cook oatmeal, bag chocolate chips

Cream the butter, add sugars gradually, keep beating. add egg & vanilla. mix flour, baking soda, oatmeal & salt in separate bowl. Then add to other mixture.

Add chocolate chips & mix. Use 2 greased cookie sheets, drop by spoonfuls, bake 350 about 10 min.

I'm disappointed that my suggested topic didn't make the cut, but there's always next time. Definitely going to make those cookies for M (or maybe his Aunt wants to make them instead?). : )

It's all a Legislative Charade. Lipa was overloaded with Debt from the Shoreham Debacle that ourRead More Legistlators got us into by canceling the Shoreham plant. Electricity? Just Put up another Windmill. The reality is that we face more Blackouts and Danger. Lipa still owes Billions from Shoreham and therefore Cannot afford to Invest in Infrastructure. So the System fails again and again and then our Legislators Blame Lipa and they say "we need reform". so give the job to someone else with a New Name but with the same big debt, and no real change. Why Doesn't Nassau County take over the Debt so that all Taxpayers are responsible and it doesn't hang solely over the Ratepayers?
